Fowes Vegetable Stir-Fry

Ingredients:
Budget: $15.00 at Harris Teeter
10 sticks of Asparagus ($3.99/1b), 4 purple Radish ($1.49/bunch), 6 Sweet mini-peppers (2 red, 2 yellow, 2 orange. $1.99/bag), 2 medium diced Tomatoes ($1.00), 10 sticks of Fresh organic Parsley ($1.59/bunch), 1 tablespoon of Olive Oil, 2 cubes of knorr cilantro seasoning ($1.89/box of 20 counts).
Directions:
- Diced tomatoes, asparagus, radish, mini peppers and toss together in a bowl, set aside.
- Pour olive oil into frying pan and place on low – medium heat for 2 minutes. Add vegetable bowl and stir for 5 minutes.
- stir fry is ready!
Serving: I love this stir-fry because it can serve up to four different meals or more and you can store it in the fridge or freezer for up to a week (or longer in the freezer) without it losing its fresh taste.
- Add Tofu and served as a stir fry dish.
- Can be served with boiled rice (Wash rice three times or until water is clear, then boil rice for 15 – 20 minutes on medium to high heat).

Serve with fried/boiled plantain (Peel Plantain and Boil for 15 minutes on medium to high heat).
Fowes Stir Fry in a Wrap.

Budget: $15.00 at Harris Teeter
Ingredients:
2 Spinach wrap (6 ct for $4.29), 1 small radish($1.49/bunch), 2 sweet mini peppers (1 red, 1 orange, $1.99/bag), 5 sticks of asparagus ( $3.99/ Ib), 1 teaspoon of olive oil, 1 cube knorr cilantro seasoning ($1.89/box (20 counts)), 3 sticks of green onions ($0.79/bunch) 1 or 1/2 medium fried plantain (50 cent)
Directions:
Toss ingredients together in olive oil for 5-10 minutes and it’s a wrap!
Serving:
Serve with cabbage to make a cabbage wrap or wrap with Vietnamese rice paper.
Vegan Sweet Mini Peppers Spinach Pizza

Budget: $20 – 35 (you may have most of these ingredients in your kitchen)
Prep Time: 30 mins
Cook Time: 20 – 25 mins
Total Time: 50 mins – 1 hour
Ingredients: Sweet-mini pepper spinach topping:
- ½ medium red onion, diced (4.49 wholefoods)
- 4 cloves garlic, diced (0.99 – 1.50 per bunch, walmart)
- 4 sweet mini peppers (yellow and red), sliced/chopped (a bag for 3.00 – 5.00, walmart, market basket)
- 4 oz baby spinach (3.55, wholefoods, cheaper at walmart or local store)
- a handful of chopped basil (3.00 basil plants, wholefoods)
- 1 tsp dried thyme (0.69 -2.99, depends of quantity, walmart)
- 2 cubes of cilantro seasoning (1.59 for a 1
- sweet red pepper flakes (0.69 -2.99, depends of quantity, walmart)
Pizza Crust:
- ¾ cup warm water
- 1 packet of red star active dry yeast
- ¼ tsp sugar
- 2 cloves garlic, diced
- 1 tbs herb de Provence
- 1 tbs thyme
- 1 1/2 cups flour (unbleached white)
- ¼ cup semolina flour
- 2 tsp olive oil
- 1/2 tsp salt
Other toppings:
- Lisanatti Almond Style Vegan Mozzarella Cheese
- 5 tablespoon of tomato Pizza sauce (3.00, wholefoods)
- 1/2 can of black olives (1.29, wholefoods)
- pepper flakes
- choice of 1 slice of Sweet mini pepper as an additional topping
INSTRUCTIONS
Sweet mini pepper spinach topping:
- Heat 2 tbs of oil in a fry pan over medium heat. Add red onions and garlic and cook for 2 minutes. Add sliced/chopped sweet peppers and cook for 3 minutes. Add in spinach, basil, thyme, cilantro seasoning, and sweet red pepper flakes, mix in. Cook additional 3 – 5 minutes.
Pizza Dough Mix:
- Mix warm water, yeast, and sugar and let sit for 3 minutes. Add 1 1/2 cups flour, salt, semolina flour, and oil, mix together with a spoon. Add diced 2 cloves of diced garlic, thyme, and herb de Provence. Mix the dough and knead together for about 30 seconds – 1 minute. Let the dough sit in a warm place for 25 minutes.
- Preheat the oven to 435 degrees F.
- Rub a tablespoon of oil on the dough, then use some flour to spread the dough in a circular form (in a pizza shape) on a flat pan. Keep the bottom thick to support heavy toppings.
Add on:
- Layer with pizza sauce, vegan mozzarella cheese, optional sweet mini pepper, sweet mini pepper spinach mixture, and olives.
- Bake at 435 degrees F for 20 to 25 minutes.
